Celery Green Sleeves

■ Green stems without thread, which can be eaten both raw and cooked.
■ They are crunchier, less fibrous and somewhat more aromatic in flavour than the self-bleaching varieties.
■ Sow from late March to early July in situ.
■ One can speed up emergence by pre-germinating under glass and pricking out the plants in (press) pots and letting them harden off.
■ Plant out in moist soil.
■ Harvesting before frost sets in.
■ Celery is diuretic, absolutely low in calories and very vitamin-rich.
